was completed about four months ahead of schedule
and several million dollars under budget by McCarthy
Building Companies, Inc.

CRANBERRIES:
NOT JUST FOR THANKSGIVING

ranberries have grown beyond their traditional
holiday role. Šey’ve made their way into main-
stream diets across America.
You might see them pop up in salads, scones and
spritzers. And when they appear, they oªer up a healthy
antioxidant punch. Plus they pack along vitamin C and
žber. Šat means they may help lower bad cholesterol
and reduce stroke and heart attack risk.
But cranberries have always been more than saucy,
sweet red rounds crushed into turkey garnish.
Historically, they’ve been credited with medicinal
properties.
Many believe cranberries can cure a urinary tract infec-
tion. However, recent research has failed to back this up.
What the research has shown is that cranberries may
discourage bacteria from settling into the stomach and
urinary tract. And that might prevent urinary tract infec-
tions and ulcers.

POP IN A FEW CRANBERRIES
Juice up
your menu with cranberries. You might try mixing them in
with sweet potatoes or other root vegetables. Mix a few into
breads, muffins or even stuffing for a little sweet surprise. You
can even use cranberry juice as a substitute for red wine to
make your marinade nonalcoholic.
Ingredients
1 tablespoon freshly squeezed lemon
juice
½ teaspoon honey
1 teaspoon freshly grated or fnely
minced ginger

teaspoon cinnamon
Pinch of salt
2 cups grated carrots
¼ cup dried cranberries
2 tablespoons sliced almonds
Instructions

In medium bowl, whisk together
lemon juice, honey, ginger, cinnamon
and salt. Toss with carrots and
cranberries.

Garnish with sliced almonds
and serve.

Makes 4 servings. Per serving: 73 calories; 2g total fat
